  1. Pour 3 cups of whole milk into a large skillet and set the heat to slightly less than medium. The milk should become very warm but not scald. Aim for a temperature between medium and medium-low.
  2. Place 2 tablespoons of cardamom pods, 1 tablespoon of whole allspice, and 1 tablespoon of whole cloves in a plastic bag. Place the bag on a cutting board and gently pound on the spices with a meat mallet or rolling pin until they crack open. They should remain mostly whole but slightly opened up.
  3. Add the cracked spices, 5-6 whole star anise, 3-4 cinnamon sticks (each about 2 inches long), a 2-inch piece of fresh ginger (peeled and chopped), 1 teaspoon of real vanilla extract, and 2-3 tablespoons of honey (adjust to your taste) to the skillet with the warm milk. Stir everything to combine.
  4. Simmer the mixture for about 5-6 minutes, until the milk is very warm and fragrant from the spices.
  5. Add 3 black tea bags (preferably organic) to the skillet and let them brew in the spiced milk for another 5 minutes.
